300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (produces 850ml, serving 10)

200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Put the listed components into a pot, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the stove and leave to reach room temperature entirely. Pour to a sterilised bottle, cap it keeping it in the fridge, it can be stored for about four weeks.

For the Batch Mix: Mix all the liquid ingredients into one big jug, let it rest for 60 minutes, then filter it , ideally through a fine cloth, making it perfectly clear.

To serve: Add 85ml from the batch mix into your mixing glass containing ice, and stir carefully for a minute until cold. Pour to a frosted cocktail glass or similar, decorate with a few cranberries and complete it by giving it a light spray with the mandarin essence over the top.
